Cod Fish Fried Delights

Ingredients
3 Pound (1.5kg) of Norwegian Cod
2 Pound (1kg) dry-style potatoes which are good for frying
1 bunch of parsley
Black pepper freshly ground
2 egg whites
Olive oil
Soybean(Vegetable) oil for frying
Desalting Norwegian Cod
Boil the cod in water and clean skin - any thorns/pimples
Rub over the Norwegian Cod with a cotton cloth or your hands to give a smoother surface
Cook the potatoes, mash them and mix them with the cod, preferably with your hands
Add the chopped parsley, black pepper, two beaten egg whites and mix
Grease your hands with olive oil and roll the cod in the potato mix
Fry in plenty of hot oil
