Ingredients

  • 3 Pound (1.5kg) of Norwegian Cod

  • 2 Pound (1kg) dry-style potatoes which are good for frying

  • 1 bunch of parsley

  • Black pepper freshly ground

  • 2 egg whites

  • Olive oil

  • Soybean(Vegetable) oil for frying

Desalting Norwegian Cod

  • Boil the cod in water and clean skin - any thorns/pimples

  • Rub over the Norwegian Cod with a cotton cloth or your hands to give a smoother surface

  • Cook the potatoes, mash them and mix them with the cod, preferably with your hands

  • Add the chopped parsley, black pepper, two beaten egg whites and mix

  • Grease your hands with olive oil and roll the cod in the potato mix

  • Fry in plenty of hot oil
