Pao De Queijo (Cheese Bread)

Pao de Queijo, also known as Brazilian cheese bread, is a popular delicacy in Brazil. Pao de Queijo can be enjoyed as a snack or as a side dish with meals. It is often served warm, straight out of the oven, when the cheese is gooey and the bread is still soft. Whether you have it plain or with a cup of coffee, Pao de Queijo is a delicious and satisfying snack that will leave you wanting more.
Ingredients
2 Cups of Sour Starch
1 Cup of Manioc Starch
1 1/2 Cup of Coarsely Shredded Cheese
3 Eggs
1 1/2 Cup of Water
1/4 Cup of Oil
1 Teaspoon of Salt
Oil To Grease Your Hands While Forming Bread


Preheat the oven to 350 degrees Fahrenheit. Separate two medium non-stick baking sheets and grease with a thin layer of oil
Put the water and oil in a small saucepan (or boiler) and bring to a boil over medium heat. Meanwhile, in a large bowl, mix the flour and salt.
As soon as the water and oil mixture boils, pour gradually over the starch to scald, mixing well with a wooden spoon (or firm spatula), until all the liquid is incorporated. If it is hot and you follow the recipe, it will make the eggs that will be added cook and the grated cheese melt, this will make the preparation go wrong.
As soon as the scalded starch softens, add the grated cheese and mix well with your hands - at that moment the dough is very heavy; it is easier to mix the ingredients with your hands.
In a small bowl, break one egg at a time and add it to the dough - if any are spoiled, you don't lose the recipe. Knead well with your hands with each addition to incorporate each egg completely. The texture of the dough is a little more rustic, with lumps of starch, and sticky. The important thing is that all the ingredients are well mixed, without the liquid part of the egg being separated from the dough.
Before shaping the cheese breads, with a spoon, scrape all the dough that is stuck to your hands; then wash and dry your hands.
To shape the breads, put a little oil on a saucer to grease your hands; with a spoon, remove a portion of the dough (about 3 tablespoons) and roll it until it is the size of a golf ball.
Transfer the modeled cheese bread to the baking sheet and repeat the process with the rest of the dough, leaving space between each breads (they grow when they bake)
Bake for about 30 minutes, until it grows and browns/goldens. Remove from the oven and serve!
